Ingredients
3 cup maida
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup curd
water (for kneading)
2 tbsp oil
1 onion (finely chopped)
2 tbsp coriander (finely chopped)
1/2 tsp cumin powder
1/2 tsp chilli powder
1/2 tsp garam masala
1/2 tsp salt
1/2 tsp chaat masala
Direction
in a large bowl take 3 cup maida
1 tsp baking powder
1/4 tsp baking soda and 1/2 tsp salt. mix well.
2. now add 1/2 cup curd and combined well.
3. adding water as required to knead the dough.
4. knead for 5 minutes forming a soft dough.
5. now add 2 tbsp oil and continue to knead.
6. knead to a smooth and soft dough. tuck the dough making sure all the sides are smooth.
7. cover and rest for 2 hours.
8. meanwhile prepare the onion toppings
in a small bowl take 1 onion.
9. add 2 tbsp coriander
1/2 tsp cumin powder
1/2 tsp chilli powder
1/2 tsp garam masala
1/2 tsp salt and 1/2 tsp chaat masala.
10. mix well making sure all the spices are well combined. keep aside.
11. after the dough has rested for 2 hours
knead the dough slightly.
12. pinch a large ball sized dough and roll.
13. dust the maida and roll to an oval shape with a slightly thick thickness.
14. spread onion topping and press gently.
15. place a butter paper
and roll making sure the onions stick to the dough.
16. flip over and now spread a tbsp of water. this helps to stick the kulcha on tawa.
17. now transfer the rolled kulcha on hot tawa (waterside facing the tawa)
18. press gently
helping the kulcha to stick to the tawa.
19. cook for a minute
or until a couple of bubbles appear and the base is cooked well.
20. now flip over and keep over the flame. this gives the tandoor effect helping the kulcha to cook like in tandoor.
21. scrape the sides and brush butter over the kulcha before serving.

onion kulcha recipe tastes great when served with paneer curry.
